Crispy Medhu Vadai/ Ulundu Vadai & Quick Coconut Chutney

Every time we buy breakfast from outside or go to a hotel, one of my orders by default would be Medhu Vadai! Also be it a birthday or a wedding anniversary, its Medhu Vadai for breakfast at MIL’s house! The taste of its crispy exterior and spongy interior along with Sambar and coconut chutney is just unparalleled!

Lately, I’m on a quest for new breakfast items as my little girl gets tired of repetition. So this vadai is something I always wanted to try out, but for some reason, I had this notion that only grown up aunties could do Medhu Vadai and not me.

Yesterday night I searched the internet for the recipe and finally landed here. I added some extra ingredients and tried it out this morning. It was so much fun and I proved my notion wrong!

  • 1 cup whole Uluntham Paruppu/ Urad Dal without skin (soaked in water for an hour)
  • 1 small onion, finely chopped 
  • 2 green chillies, finely chopped 
  • 1/2 tbsp ginger paste
  • 1 tbsp black pepper corns
  • 2 tbsp finely grated coconut
  • 2 tbsp finely grated carrot
  • 2 tbsp coriander leaves, chopped
  • A sprig of curry leaves
  • 2 or 3 pinches of asafoetida 
  • 2 tbsp rice flour
  • Salt to taste
  • 3 tbsp or slightly more water
  • Drain the water from the uluntham paruppu and transfer it to the mixie. Beat it fine with asafoetida, rice flour and salt adding water in small amounts until it is of the consistency of idly batter or slightly thicker. Keep aside.
  • To the vadai batter add the onions, green chillies, ginger paste, pepper corn, grated coconut, grated carrot, curry leaves and coriander leaves. Mix well.
  • In a frying pan pour a generous amount of oil and heat it.
  • Keep a bowl of water beside you. Wet your hands, scoop some batter, make a hole in the middle with your thumb and drop in oil. (For detailed pictorial instructions click here!)
  • Fry the vadais in medium flame, turn it over until both sides are golden brown!
  • Serve hot with fresh coconut chutney.
Coconut Chutney
  • 1 cup chopped coconut slices
  • 1 green chilly
  • 2 cm tamarind
  • 1 garlic
  • 1/2 small onion chopped
  • Salt to taste
Put the above ingredients in a mixie, add a little water and make a fine paste!
