Eggless Chocolate Cake

One of DH’s friend who is a vegetarian has been requesting me to try out an eggless cake recipe for a long time. But somehow, being a complete non-vegetarian, I wasn’t too sure how an eggless cake would turn out. It happened that one fine evening, I was so bored and there were no eggs left in the fridge that I had no choice but to try out an eggless cake. To my pleasant surprise it turned out softer and tastier than the usual cakes we bake with eggs! Thanks to Joy of Baking šŸ™‚


  • 1 1/2 cup all purpose flour (Maida)
  • 1 1/3 cup granulated white sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp cooking soda
  • 1/4 salt
  • 1/3 cup melted unsalted butter
  • 1 cup warm water
  • 1 tsp lemon juice or vinegar
  • 1 1/2 tsp vanilla essence
  • Pre-heat the oven to 180C
  • Prepare the baking pan by greasing it with a small amount of butter and dusting maida over it
  • Melt the butter in a microwave. Then combine it with water, lemon juice/vinegar and vanilla essence using a fork
  • In a separate bowl, mix the dry ingredients – maida, granulated sugar, baking powder, cooking soda, salt and cocoa powder until well combined
  • Fold the dry and wet ingredients together using a flat wooden spoon
  • Pour the prepared batter in the baking pan and bake for 30 mins at 180C
  • Check whether the cake is fully baked by inserting a toothpick. The cake is baked if the toothpick comes out clean
  • Cool the cake for atleast an hour before you turn it over!
